Ted Danson’s new book Oceana (Recipes: fish & scallops)

Today I heard an interview with Ted Danson on The Leonard Lopate Show, talking about his new book Oceana: Our Endangered Oceans and What We Can Do to Save Them. He brought up some great points about worldwide over-fishing and some of the problems with farmed fish. For example, he says it takes 3 pounds of wild fish to feed 1 pound of farmed salmon.

I’ve been eating a lot more fish lately because the omega-3 fatty acids are very important for baby’s brain development, which takes off in the third trimester. I feel good about the fish I cook because I talked to the owner of Pura Vida Fisheries (the company that brings them to our local farmer’s market). They catch the fish nearby on Long Island and use sustainable fishing practices. The catch is brought to the market in less than 24 hours, so they are really fresh too. Do you eat fish at home? Do you know where it comes from?

Here are a couple of simple ways I like to prepare fish:

  • White fish, such as flounder, are delicious when you put a bit of butter on the top, sprinkle with sea salt and freshly cracked pepper and bake them on a glass dish (for easy cleaning) at 350°F for about 10-15 minutes.
  • Scallops are delicious when cooked in fat in a cast iron skillet. (I usually save the fat from making beef or pork). I put the heat up pretty high so that they get a nice dark golden outside, and cook them about 5 minutes on each side.
  • In the fall and winter I like to serve fish with potatoes mashed with cream and a side of broccoli or spinach. In the spring and summer I like to cook seafood on our indoor cast iron grill and serve with grilled veggies and pasta.

Here’s a photo from last spring. I grilled scallops and fiddlehead ferns and ate them over whole grain pasta with oil and garlic.
