Spelt Chocolate Chunk Cookies

A few weeks back I decided to try a new type of flour from the farmer’s market and ended up getting spelt flour. Today I was in the mood for some chocolate chip cookies so I decided to try and make them with the spelt flour. The cookies came out wonderfully. The spelt and pecans give them a nice nutty flavor and crunch and the maple syrup gives a sweet flavor while allowing the dough to remain soft and chewy.

  • 1-¼ cups spelt flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ⅓ cup 100% maple syrup
  • ⅓ cup canola oil
  • 1-½ teaspoons vanilla extract
  • ½ cup pecans, toasted and roughly chopped
  • ½ chocolate bar, roughly chopped

Preheat oven to 350°F. Stir dry ingredients except nuts and chocolate together. In a second bowl, stir wet ingredients together. Add the wet ingredients to the dry and stir until combined. Stir in pecans and chocolate. Drop by rounded tablespoonfuls onto cookie sheet and bake for 11 minutes.
